Frijoles Fresca Bowls

Ingredients
- 2 scallions
- 3/4 cup Jasmine rice
- 1 poblano pepper
- 1 14oz can black beans
- 1 Roma tomato
- 1 Tbsp southwest spice mix (equal parts garlic powder, chili powder, cumin)
- 7 oz verde/tomatillo salsa
- 1/2 cup Pepper Jack cheese
- Olive oil
- Salt & pepper
Instructions
- Trim & thinly slice scallions, separating the whites from the greens. Heat a drizzle of oil in a small pot over medium-high heat. Add scallion whites and cook until softened, 1 minute. Stir in rice & 1 1/4 cups water. Bring to a boil then reduce heat to a low simmer and cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
- Finely dice tomato. In a small bowl, combine tomato, half the scallion greens, a large drizzle of olive oil, and salt & pepper to taste.
- Core, deseed, and dice poblano into 1/2 inch pieces. Heat a drizzle of olive oil in a large pan over medium-high heat. Add poblano and cook, stirring occassionally, until softened and lightly browned, 4-5 minutes. Season with salt & pepper. Reduce heat to medium.
- Drain & rinse beans. Add beans & southwest spice mixture to pan with poblano. Cook, stirring until mixture is fragrant, 1-2 minuntes. Stir in green salsa and cook, stirring occasionally, until beans are softened, 1-3 minutes. Season with salt & pepper. Turn off heat.
- Divide rice between bowls and top with bean mixture, pepper jack cheese, tomato mixture, and remaining scallion greens.
Notes
Great as a breakfast with a couple fried eggs on top.
