Paella

Ingredients
- 1/2 pound boneless, skinless hicken thighs
- Olive oil
- Salt, papper
- Paprika or smoked paprika
- Oregano
- 1/2 pound chorizo
- Saffron
- 1 spanish onion
- Fresh parsley
- 1 bell pepper
- 3-4 garlic cloves
- Chili flakes
- 3 roma tomatoes, diced (or diced canned tomatoes)
- bay leaf
- 1 lemon, zested then very thinly sliced into circles
- 1/2 cup dry white wine
- 2 cups (?) short grain Spanish rice (bomba)
- 3 cups (?) chicken broth - or correct amount to pair with rice
- 1/2 pound seafood - shrimp, fish, calamari, mussels
- Peas
- Olives - kalamata or castelveltrano
- Green onion
Instructions
- Marinate chicken in oil, salt, pepper, paprika, oregano
- Cook chorizo before adding to pan
- Soak saffron in a couple Tbsp water before adding to pan
- Heat 3 Tsbp oil in pan, heat, add onion, parsley, bell pepper, garlic, chili flakes, cook until onion transluscent
- Add tomato, salt, pepper, paprika, saffron, bay leaf, lemon zest, stir, 5 minutes
- Add 1/2 cup wine and stir, remove brown bits from bottom of pan, add salt if needed
- Add chicken and brown it pretty decently
- Add rice, stir to coat with everything, don't stir from this point on
- Add broth, jiggle pan to even it all out
- Bring to a boil, reduce heat, cook 15-18 minutes uncovered until rice done
- Add seafood and any other veggies (peas, olives), top with lemon slices, cook 5 minutes or until everything looks done
- Turn up heat to high for last 45 seconds to brown the bottom rice
- Remove from heat and cover, leave sit 10 minutes
- Serve, garnish with parsley, lemon, green onion
