Sourdough Bread

Ingredients
- Levain: 38g stoneground whole wheat flour, 38g bread flour, 76g warm water, 38g ripe sourdough starter
- Main dough: 773g bread flour, 114g whole wheat flour, 51g whole grain rye flour, 653g warm water, 18g fine sea salt
Instructions
- In small container, mix levain ingredients and keep in oven with light on for 5-6 hours.
- In medium mixing bowl, mix flour and 603g of the water. Cover and let rest 1 hour in oven with light on.
- To the mixing bowl holding the dough, add salt, ripe levain from Step 1, and up to remaining 50g water. Mix by hand or with a dough whisk until incorporated. Transfer dough to a bulk fermentation container and cover, continuing to keep in oven with light on.
- Give the dough 4 sets of stretch-and-folds at 30-minute intervals, where the first set starts 30 minutes after the start of bulk fermentation.
- Starting 4 hours after the beginning of bulk fermentation, lightly flour your workspace and scrape out dough. Using bench knife, divide dough in half. Lightly shape each half into a round shape and let rest for 25 minutes, uncovered.
- Shape dough into round or oval shapes and place in proofing baskets. Cover proofing baskets with reusable plastic and seal shut. Let dough sit out on counter for 20 minutes then place in refrigerator and proof overnight (12-16 hours).
- Preheat oven with a Dutch oven inside to 450. When oven is preheated, remove dough from fridge, score it, and transfer to the preheated Dutch oven. Place Dutch oven in oven, cover with lid, and bake for 20 minutes. Remove lid and bake 30 more minutes. When done, internal temperature should be around 208. Let loaves cool for 1-2 hours on a wire rack before slicing.
