Beef & Mushroom Stew

Ingredients

  • 1.5 lbs stew meat
  • 8 oz cremini mushrooms, sliced
  • 4 medium Russet potatoes, diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 Tbsp tomato paste
  • 2 Tbsp olive oil or butter
  • 1 Tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt & black pepper to taste

Instructions

  1. Heat oil or butter in a large pot over medium-high heat. Season beef with salt and pepper. Sear until deeply browned on all sides. Remove beef and set aside.
  2. Add mushrooms to the pot. Cook until browned. Add onions, garlic, tomato paste, and thyme. Stir constantly for 1 minute.
  3. Pour in Worcestershire sauce and a splash of broth. Scrape up the browned bits from the bottom of the pot.
  4. Return beef to the pot. Add potatoes and the rest of the broth. Bring to a boil, cover, and lower heat to a gentle simmer. Cook for 50-60 minutes until beef is tender.
  5. Scoop out 1 cup of the cooked potatoes and a splash of broth. Mash or blend them until smooth. Stir this purée back into the pot to instantly thicken the stew. Simmer for 5 more minutes.
