Salmon Cakes with Corn & Avocado Salsa

Ingredients

  • 1 can salmon
  • Olive oil
  • 1 cup finely chopped red bell pepper
  • 1 garlic clove, minced
  • 1/4 cup thinly sliced green onions
  • 3 Tbsp reduced-fat mayonnaise
  • 2 Tbsp fresh lime juice, divided
  • 1 1/2 tsp hot sauce
  • 1/2 tsp salt, divided
  • 1 large egg
  • 1/2 cup finely chopped fresh cilantro, divided
  • 3/4 cup panko (Japanese breadcrumbs), divided
  • 1 cup frozen white corn, thawed
  • 1 medium avocado, diced
  • 3 Tbsp finely chopped red onion
  • 2 Tbsp finely chopped poblano pepper

Instructions

  1. Heat a large nonstick skillet over medium heat. Coat pan with oil. Add bell pepper to pan; saute 3 minutes. Add garlic; saute for 1 minute. Remove from heat. Place mixture in a large bowl.
  2. To the bowl, add salmon, green onions, mayonnaise, 1 Tbsp lime juice, hot sauce, 1/4 tsp salt and egg, stirring well. Stir in half the cilantro and 1/4 cup panko.
  3. Divide salmon mixture into 6-7 equal portions, shaping each into a 1/2-inch thick patty. Dredge both sides of patties in remaining 1/2 cup panko. Chill at least one hour.
  4. Heat pan over medium-high heat. Coat pan with oil. Add cakes to pan; cook 4 minutes on each side or until browned.
  5. To prepare salsa, combine remaining ingredients and stir gently to mix. Serve immediately with cakes.

Notes

Can substitute avocado for the mayonnaise.
